A Bellini cocktail is a combination of Prosecco and peach puree that originates in Venice, Italy. It is thought that the Bellini was first created sometime between 1934 and 1948 by a Giuseppe Cipriani, who was the founder of Harry′s Bar in Venice. The drink got its name from the unique pink colour that is said to have reminded him of the toga worn by a saint in a painting by 15th-century Venetian artist Giovanni Bellini. An official IBA cocktail, the Bellini is a popular drink served around the world and was originally made using pureed white peaches. The pink hue was obtained by adding a small amount of raspberry or cherry juice.  Today various recipes exist for a Bellini, including those that replace pureed peaches with peach nectar or peach schnapps – especially when the fresh peach is out of season.

  • 100ml Prosecco
  • 50ml fresh peach puree

How to make

  1. Pour the fresh peach puree into a chilled glass and top up with Prosecco
  2. Stir gently
