Bijou cocktail

A Bijou is a cocktail made with gin, vermouth and chartreuse. It is thought to have been invented by Harry Johnson, writer of the Modern Bartender′s Manual -1900. The cocktail is called Bijou (French for jewel) because it combines the colours of three jewels; gin for diamond, vermouth for ruby and chartreuse for emerald.

Ingredients

  • 30ml gin
  • 30ml sweet vermouth
  • 20ml green chartreuse
  • Dash of orange bitters
  • Lemon zest - to garnish
  • Ice

How to make

  1. Stir the ingredients in a mixing glass with ice until chilled
  2. Strain into a cocktail glass
  3. Garnish with a piece of lemon zest and an ice cube
